Tropical Fruit Parfait

Serves 2 Parfaits


2 cups whole milk Greek yogurt, plain or vanilla
½ cup store-bought granola
1 Farm Direct Supply dragon fruit
1 small starfruit, sliced
2 tablespoons diced fresh mango
1 small kiwi, sliced
1 small banana, sliced
2 tablespoons dried coconut chips or shredded coconut
2 tablespoons honey


Step 1.

Spoon about half a cup of yogurt into the bottom of 2 small parfait glasses. Top each with about 2 tablespoons of granola. Spoon the remainder of the yogurt on top of the granola in each glass.

Step 2.

Cut the dragon fruit in half. Using a melon-baller or a small spring-loaded scoop, scoop the dragon fruit into small spheres.

Step 3.

Carefully arrange the dragon fruit, starfruit, mango, kiwi and banana on the top of each parfait. Sprinkle with coconut chips or shreds and drizzled with honey before serving.

Step 4.

Variation: In a blender or food processor, combine dragon fruit and yogurt to infuse the yogurt with fresh dragon fruit. Assemble parfait as directed.
