Steamed Asparagus & Snap Peas

ingredients:

  • 1 Tbsp. extra virgin olive oil
  • ⅓ cup pine nuts
  • ½ cup red onion, thinly sliced
  • ½ cup water
  • 1 bunch Farm Direct Supply asparagus, trimmed
  • 1 cup Farm Direct Supply sugar snap peas, stems and strings removed*
  • Salt to taste

instructions:

Step 1.

Heat olive oil on medium-high heat in a skillet, then add red onions and pine nuts. Sauté for 2–3 minutes until pine nuts are browned and onion is softened. Remove from the skillet and set aside.

Step 2.

Add water to the hot skillet, then add asparagus and sugar snap peas and cover with a lid. Steam for about 2 minutes, until al dente. Turn stove off.

Step 3.

Drain water out of the skillet, add pine nuts and onion back to the pan. Add salt to taste, toss to combine and serve warm.

 

Note: *To remove pea stems and strings, use a paring knife to snap off the stem end of the pea toward the top seam, leaving the stringy part attached. The partially disconnected end will act like a “zipper”. Pull the disconnected stem end to remove the string, just like a zipper. Repeat on the other side.
