Dragon Fruit Ice Pops

ingredients:

White Dragon Fruit Pops :

 1 1/2 cups Farm Direct Supply Dragon Fruit with white pulp

½ cup pineapple, fresh or frozen

1 cup full fat coconut milk

2 tablespoons honey

Red Dragon Fruit Pops:

1 ½ cups Farm Direct Supply red dragon fruit, skin removed

½ cup pineapple, fresh or frozen

1 cup coconut water or regular water

2 tablespoons honey

instructions:

Step 1.

To make the white dragon fruit pops place the dragon fruit pulp in a bowl or on a plate and mash with a fork until broken down.

Step 2.

In a high speed blender, blend pineapple, coconut milk and honey until smooth. Add mashed dragon fruit pulp and pulse 1-2 seconds just to combine. (Overprocessing will blend the seeds and create a dark mixture.)

Step 3.

Pour mixture into a popsicle mold, about ½ cup per pop. Place in freezer until frozen solid.

Step 4.

To remove, submerge bottom of mold in warm water or run under warm water to loosen, then carefully remove ice pops.

Step 5.

To make the red dragon fruit pops blend all ingredients until smooth in a high speed blender.

Step 6.

Pour mixture into a popsicle mold, about ½ cup per pop. Place in freezer until frozen solid.

Step 7.

To remove, submerge bottom of mold in warm water or run under warm water to loosen, then carefully remove ice pops.
